White Fish sporting a Cheddar Cheese Topping.
Serves 4
Cooks in 15 minutes
Ingredients:
- 4 x 170g portions chunky white fish – Pollock, Ling or Haddock.
- Salt & ground Pepper to taste.
Cheese Topping:
- 2 tablespoons mayonnaise
- 100g grated Cheddar cheese or any preferred combination
- 2 spring onions - Finely chopped
- Large tomato - Finely chopped
- Handful of Chopped parsley
Method:
Season fish and place on baking tray or grill pan.
Combine all the ingredients for your topping.
To Bake:
Spoon the topping evenly over the fish. Place in preheated oven 180ºC/Gas 4 for 15-18 minutes, or, until the topping is golden and fish is cooked through.
To Grill:
Place fish and grill under a medium heat for 5-6 minutes. Turn the fish over and, spread with topping, continue to grill until topping is golden and fish is cooked through.
