Grilled Mackerel with Honey & Mustard.
Serves 4.
Cooks in 3 - 4 minutes.
Ingredients
8 mackerel fillets.
- 2 tablespoons of natural yoghurt.
- 2 teaspoons of wholegrain mustard.
- 1 teaspoon honey.
Method:
Combine all the topping ingredients and set aside for a few minutes to assimilate.
Grill the fillets, skin side up for 3-4 minutes.
Turn and spread topping on flesh side and grill until cooked through.
Serve With Garlic Bread:
Method:
- 8 slices country style bread cut on the diagonal.
- 1 garlic clove halved.
- Olive oil for drizzling.
Grill the bread lightly on both sides.
Rub toast with the cut side of the garlic clove
& drizzle a little olive oil over each slice.
