Basic Relish for fish recipes.

 

Mix together the following ingredients:

1 tsp. English mustard.
1 shallot or small onion very finely chopped.
4 Tbsp. wine vinegar.
Juice of ½ lemon.
1 tsp. brown or white sugar.
1 heaped Tbsp. finely chopped Parsley.
¼ tsp salt.
Freshly ground black pepper - to taste.

 

Stir all ingredients together and allow to stand while the ingredients blend together.

 

This basic sauce is versatile and many ingredients can be substituted for the mustard
to vary the flavour & character:
e.g. chopped Capers
cloves garlic finely chopped
or puréed peppers
