Barbecued Spiced mackerel with cucumber Raita.
- 8 Mackerel fillets
- 1 tbsp paprika
- 2 tsp ground cumin
- 1 tsp ground coriander
- 2 pinches dried crushed chilli flakes
- 2 cloves garlic
- Juice of 1 lemon
- 3 tbsp Greek yoghurt
- 1 tbsp olive oil
- Salt
Ratia
½ Cucumber chopped into dice
300gms Greek yoghurt
Salt & Pepper to taste
Mix together spices, lemon juice, garlic, yoghurt & oil to make a smooth paste.
Season the marinade according to taste.
Make 3 or 4 diagonal slashes (depending on size of fillets) to the bone in each fillet. Rub some of the marinade onto the cavity side also, but concentrate on the slashed side.
Place the mackerel fillets in a shallow dish & pour over remaining marinade.
Leave to one side for 15 to 25 minutes for the flavours to infuse.
Add the cucumber cubes to the yoghurt with lemon juice, salt & pepper.
To Barbecue - Brush the bars of the barbecue with oil - this helps to stop the fish sticking.
Lay marinated mackerel fillets on barbecue & cook over hot coals, until the skin has charred & blistered & the fish is cooked through.
