The Crystal clear water in South West Donegal's sea are a rich source of food. From the king of fish - the Atlantic Salmon or the humble Mackerel, to beautiful seaweeds, there is an abundance for the taking. Fish would traditionally have been poached, to retain their flavour and appearance, or made into a filling fish pie or a hearty Chowder. Seaweeds such as Dulse provide a rich source of iodine and fibre. They are a complete food.
Oily fish are a rich source of omega 3 fatty acid, which our bodies cannot produce.
Omega 3 essential fatty acids keep our immune systems in good shape. It is important that we get omega 3 from food. Omega 3 fatty acids are associated with lower LDL cholesterol (bad), weight loss & brain health, because Omega 3 fatty acids improve how we process sugar & store fat.
To ensure you get a regular supply, eat oil-rich fish, like mackerel, salmon or trout, once a week.
The complete indispensable trinity of flavours for fish recipes are; Onion or members of it's family: garlic, leek, shallot chive & spring onion, Parsley & Lemon. These three ingredients will enhance the flavour of all fish recipes.
